Exploring the extent of variability in tannin content and composition found in the skins of grape cultivars (Vitis vinifera L.)

The exploration of the grape berry tannin resulted in finding more variability in tannin content than what was previously expected however, there was little variation in tannin composition. The results further showed some unexpected outcomes with table grape varieties such as Red Emperor and Red Globe having tannin levels higher than traditional wine making varieties previously thought to have high tannin levels such as Shiraz, Cabernet Sauvignon and Merlot.
